Pasta Wild Garlic and Shrimp
Lovely seasonal pasta using wild garlic, shrimps and vegetarian caviar

Ingredients

200g pasta (uncooked)
40g red onion (finely diced)
4 cloves garlic (finely choped)
1 red chili (finely choped)
40g butter
100g wild garlic (roughly choped)
4 tsp vegetarian caviar
50g parmesan (finely grated)
125g cherry tomatoes (Cut in half)
180 shrimp meat (buy 300g shell on shrimp)
Rosemary, Thyme, Olive oil, Salt
Method

Place a large pan on medium to high heat and add 2 Tbsps of olive oil and the butter.
Once hot, add the onion, garlic, chili and herbs.
Fry the shrimps with the skin on in small batches in the pan with the herbs until they form a "C". Once the form an "O" they're overcooked).
Take the shrimps out and put to the side.
Add the tomatoes into the pan and reduce the heat to low.
Now is a good time to start cooking the pasta.
Add 3/4 of the wild garlic and the parmesan into the pan and give it a mix.
While you are waiting on the pasta, peel the skin of the shrimps and chop them roughly.
Once the paste is cooked, take 150ml of the pasta water and add to the sauce.
Drain the pasta and add to the pan. Mix it all together and let the sauce coat the pasta.
Take the pan off the heat and add the rest of the wild garlic, the vegetarian caviar, the shrimps and season with salt and pepper to taste.
Let it sit for 1 minute, so that the shrimps can warm up a little bit and then serve with parmesan.

Lovely! Do as described. The vegetarian caviar gives a nice color pop and ups the sea food taste. If you can't find it, you can also use 4 anchovies.
